It's most likely because of the European conquest of South America, especially by the Spanish. The main religion of Europe at the time was Catholicism and the language of Catholicism was Latin. And so as Catholicism spread through South America through Spanish and other European missionaries so in turn was Latin.
Explanation: We call latin america latin america not because there's latin people there but we call this area latin america because this region of the world from Mexico all the way down to Tierra del Fuego or Argentina at any given point was conquered and destroyed and reoccupied by these European nations including America.
This was a very bloody tragic history that happened so that's why we use the word latin.
