One thing is the age of the surrounding soil/rock.  By carbon dating the fossil, you can determine the age of the layer of rock, because it will be the same age.  You can also determine where a species used to live, and its environment, based on knowledge of location and your knowledge of the ecosystem back then.  You can also determine weather the animal was a carnivore, herbivore, or omnivore, if you have teeth fossils.  A fifth thing is you can tell when the animal was alive, also by carbon dating.
