For one, they can interpret what the artist or composer was trying to interpret with the piece and then they can convey that through plying, singing, etc. Next you can use that skill and apply it to your own composition. If you wanted to write a Fugue, you would study pieces by Bach as he liked (and composed quite a few brilliant) fugues. If you wanted to write a pop song, you may want to look at pieces by Adele or Lorde to understand the way the lyrics interact with the music and the emotion being conveyed and the way rhythms can change the feel of a song.
