We lit a fire, burnt an offering,
and took some cheese to eat; then sat in silence
around the embers, waiting. When he came

The Greeks valued hospitality, and this excerpt is showing us that the Cyclops is not. The burnt offering could be interpreted as a peace offering, and the Cyclops rejects this.
