The option that shows parallel construction would be A, "being happy, being sad and being depressed".  In order to present a parallel construction, you must be sure that each part of the sentence uses the same grammatical structure. In this case, the grammatical structure used in all the phrases is the gerund (-ing form).

In B two out of three phrases contain the -ing form so that is not the correct option. The same happens in C (two gerunds and one noun phrase).
