To absorb kinetic energy and dissipate the force of a crash, new cars have special safety features such as air bags and crumple zones. As these features deform, they increase the amount of time it takes for a person to stop or hit an internal object and therefore reduce the speed. Since kinetic energy is proportional to speed, this takes some of the energy out of the collision.
