what is the relationship between an organism's DNA and protein specificity?

Well, DNA is just a big recipe for all kinds of proteins. So your DNA will determine what proteins are made in each organism. There can be slight differences in the recipes - for example all humans have the recipe for hair, but our recipes are just a bit different - thus the different hair colors we all have.
