No she probably wouldn't have, she knew about Paris and knew she was being forced to his hand. I think the boundaries and chains on her is what made her less interested. She didn't know about Romeo at the party, she didn't even know that their parents were foe's. He was exciting to her, he was her way of rebelling and being free. So if she hadn't have met Romeo it probably would have been a forced relationship that she wouldn't have enjoyed.
