In the process of cleaning and sanitizing in a three compartment sink, the sanitizing part comes as the fourth step. The three compartment sink follows five steps of cleaning, in three different compartments.
The steps include, soaking the items, cleaning them with detergent solution at or above 110 degree fahrenheit , then rinsing them to remove any detergent, sanitizing them in a solution of proper concentration and thereafter air drying all of them.
In the first compartment, washing with detergent is done. In the second compartment, we rinse the washed product, using hot water. Finally, in the third compartment sanitization is done using a chemical sanitizer.
