When taking blood pressure, the sounds heard when the pressure cuff is released are due to Rising of the Systolic Pressure above the cuff pressure.

When deflating the cuff, the first sound is due to the Systolic Pressure. The cuff pressure is released by the opening of the airflow valve in a counterclockwise direction. The sound heard is a Sharp Tapping sound.

Systolic pressure is the pressure generated due to contraction of heart and Diastolic pressure is generated due to the relaxation of the heart.

Blood Pressure is measured by a device called Sphygmomanometer.

The sounds heard on releasing the pressure cuffs are due to the change of flow of blood through the artery. These sounds are called  Korotkoff sounds.  These are generated when the cuff pressure is changed which changes the flow of blood through the artery.
