When an electron drops from one level to a lower energy level, it emits a quantum of energy. The different mix of energy differences for each atom produces different colours. Each metal gives a characteristic flame emission spectrum.

The atom of an element has energy levels in which electrons are located.
When subjected to the addition of energy, these electrons jump in level (performing a quantum leap) and, after returning to their initial stage, they release energy in the form of photons (light).
Different elements have different amounts of energy needed for this quantum leap to happen, so they emit different wavelengths (colors).
