The roots of plants take up nitrates from the soil. what are nitrates used to make?

The nitrates collected by the plant are used to make substances known as amino-acids that on the other hand are used to make the proteins needed.

An amino-acid is basically a carboxyl with an amino (carboxyl+amino = amino-acid).
