Simple. Red blood cells, after they mature, lose almost, if not all internal organelles, to serve the sole function of transporting oxygen and nutrients to energy-producing cells, and delivering their waste, namely CO² to the lungs to be breathed out. No nucleus (and DNA) means that it cannot code for proteins.
