Vegetables:

These are rich in vitamin C and you may eat as many of these as you like every day. You can eat vegetables cooked or raw in salads or with dips. As well as fresh, you can eat tinned or frozen vegetables.

There are a variety of vegetables including:

root vegetables: carrots, parsnips and potatoes
leaf vegetables: spinach and lettuce
seeds: peas and beans
bulbs: garlic and onions

To retain nutrients, vegetables are best eaten raw or lightly cooked. They can be steamed, baked, boiled or fried.
